A Vegetarian Thankgiving! Day 12: Butternut Squash Lasagna

Want to surprise your guests this year? Here’s a dish I’ll bet they’ve never heard of. This butternut squash lasagna incorporates both spicy and sweet flavors to turn a traditional Thanksgiving vegetable into a classic pasta dish. This is a surprisingly simple recipe with a couple of twists (I’d never seen a lasagna made with cookies before!) that offers a welcome break from the holiday standards.
