Popcorn Broccoli

If you’re like me, you enjoy roasted veggies as a side dish, but have you ever had it for a snack?’

Little, bite-sized broccoli florets, coated with olive oil with Parmesan cheese make for a snack that may be as addictive as popcorn.

Check out this recipe for popcorn broccoli, which turns an old standby into a great treat. Heat up the oven, pop in the greens and enjoy!

Ingredients

1 large head of broccoli
2 tsp extra virgin olive oil
Pinch of kosher salt
Pinch of ground pepper
1.2 tsp garlic powder
1 tbsp grated Parmesan cheese

Preparation process

Pre-heat the oven to 400 degrees.

Clean and dry the broccoli, separate into florets and cut into bite size pieces

Place the florets in a bowl and drizzle with olive oil.

Add the salt, pepper, garlic powder, and Parmesan, and toss until the broccoli is coated

Lightly coat a baking sheet with cooking spray and spread the broccoli pieces on the sheet, making sure to separate the pieces.

Cook for 15 minutes, flip the broccoli, then cook for an additional 10 minutes and serve.
