High Protein (and Lean!) Peanut Butter Cups

Finding sources of protein can be a challenge for vegetarians, so I always keep a supply of whey protein powder in my pantry. Protein powders come in all kinds of flavors, but chocolate and vanilla are the most common, and they’re usually sweetened with Splenda, which means that most of the calories come from protein instead of sugar or fat.

Most protein powders are used to make shakes, but this recipe shows how to use it, along with a few basic ingredients, to recreate peanut butter cups. They’re easy, delicious and – best of all – contain 28.5 grams of protein.
