Healthy Tex-Mex Bean Salad

This is a great bean salad recipe, with a Tex Mex flare and a light vinaigrette dressing.

The addition of celery, bell pepper, tomatoes and corn, along with green onion, garlic, oregano, and cumin make for a very flavorful dish…Just the right compliment for whatever you are serving as the main dish! You can even spice this up further with jalapenos.

Watch Rita demonstration of how to dice fresh tomatoes, which can be a challenge, especially if the tomatoes are fully ripened.

Share this recipe with friends who love bean salad and the Tex-Mex spices.

Beans are down-home, hearty, versatile, healthy and inexpensive. Since they are a staple in the vegetarian diet, we can get bored with the same old ways of cooking and serving them.  Check out this book for great new ideas and recipes. Warning: not all recipes are vegetarian… but the majority are.
