Roasted Vegetables
Roasted vegetables make a perfect holiday side dish..and are super easy!
Just cut your favorite veggies in bite size pieces (zucchini, mushrooms, peppers, cherry tomatoes, etc.), arrange in a baking pan, drizzle with olive oil, sprinkle with rosemary, add salt and pepper and roast in the oven for 20 minutes at 375 degrees. Drizzle with balsamic reduction.
Note: The optional balsamic reduction is made by simmering balsamic vinegar on the stove for 20 minutes, then letting it cool before you drizzle it on the veggies. Yum!
