Pink Grapfruit Pie
If you’re looking for a delicious fruit dessert to surprise your friends, it’s hard to top this one. OK, grapefruit pie doesn’t have a great ring to it, but this recipe turns out incredibly well; my guests are delighted every time I serve it. Watching your friends’ surprised faces when they end up loving this dish is a great bonus!
Ingredients
1 deep dish pie crust, unbaked
2 eggs
2 teaspoons grapefruit zest
½ teaspoon lemon zest
¾ cup sugar
½ cup milk
¾ cup red grapefruit juice, fresh (about 1 grapefruit)
1 stick butter, melted (8 tablespoons; ¼ pound)
3 tablespoons flour
For garnish: 1 grapefruit cut into segments
Preparation
Preheat oven to 400 degrees
Score the bottom of the crust with a fork.
Add the eggs to a bowl and beat
Spread some of the beaten eggs on the bottom of the crust with a brush
Pre-bake the crust into the oven for 5 minutes
Mix the zest and sugar into the eggs. Stir well, then add the milk, juice, and butter. Mix everything together with a whisk.
While whisking, sprinkle in the flour in until everything is completely combined
Pour the mixture into the pre-baked crust and put back in the oven for 40 minutes. Insert a knife into the pie; if it comes out clean, the pie is ready to pull from the oven.
Let the pie cool completely, garnish with grapefruit segments and serve.
