Japanese Cheesecake
Wow – this is one easy cheesecake recipe! I’d never heard of Japanese cheesecake before, and I’m so glad I found this recipe. The base is made of vanilla wafers, crumbled up in a sandwich bag, and the other ingredients are common household foods that you probably have on hand right now. Doesn’t get much easier than that!
To lower the calorie content, you can make it with light cream cheese and by substitute stevia for sugar. Just make sure to get the amount of stevia just right, as gauging the proper quantity you need can be tricky. (Fortunately there are formulas online that will help.) I had a lot of fun making this, and I think you will too.
