Italian Onion Rings
If you’re in the mood to indulge yourself (or your guests) with a savory deep-fried snack, look no further. This recipe shows how to make homemade onion rings into three different flavors – pesto, tomato and olive. You can buy the tomato paste and pesto at a store, but you’ll get richer flavors by mixing them yourself. In the video, the chefs cook the rings in a deep fryer, but if you don’t own one, a large saucepan will do the trick.
Ingredients
1 large white onion
1 tbsp tomato paste
1 tbsp basil pesto
15 pitted black olives
¾ cup plain flour
2 eggs
2/3 cup milk
Vegetable oil (the quantity will depend on the quantity of onion rings being prepared)
Preparation Process
Slice the onions into thick slices and remove the skin.
Mix the olives in a blender or food processor until smooth
In a bowl, mix the flour, eggs and milk and whisk until the batter is smooth and even, then pour the batter in equal quantities into three separate bowls.
Pour the pesto, tomato paste and olive mix into the separate batters.
Preheat a fryer to 350 degrees. If you don’t own a deep fryer, heat the oil in in a deep saucepan
Dip the onion rings into the batters, then carefully lower into the fryer or saucepan. Fry for 3-4 minutes, or until crisp.
Let cool and serve.
