Grilled Romaine Salad
Here’s a salad I bet you’ve never tried (I hadn’t cooked it until yesterday!) It’s a wonderful grilled heart of romaine lettuce salad that can be made on an outdoor grill or a stove top grill pan. The recipe calls for a Parmesan cheese topping; I prefer feta or goat cheese – but Parmesan will work in a pinch. Top it off with olive oil and you have a splendid, guilt-free mid-day snack. Great alternative to the standard caesar salad!
