Zucchini Pasta with Marinara Sauce – Raw and Vegan Friendly!

Make pasta from zucchini? Why not?

Zucchini is similar to white pasta in terms of texture and this is a very healthy alternative to pasta. The marinara sauce is delicious. And this is a raw recipe!

Here is what you’ll need.

  • Zucchini
  • Chopped tomatoes
  • Chopped red bell peppers
  • Sun-dried tomatoes
  • 1 clove garlic
  • Basil
  • Oregano
  • Olive Oil
  • Salt
  • Pepper
  • Cayenne pepper

A few tips: Toss right before serving so the zucchini does not get watery. The sauce and marina can both be stored in the fridge for a few days, so this meal can be served multiple times. You can also warm the sauce if you’d like.

A spiral slicer makes this dish even easier. The chef in the video uses a top-loading slicer, but I’ve found that a side-loading slicer is much more versatile. This is a great one:
