Breakfast Burrito (Quesadilla) Recipe

Have guests and are not sure what to make for breakfast? This is a very easy recipe that can be made with or without eggs.  This can be served for lunch or dinner, as well as for breakfast. Enjoy!

You’ll need

4 tortillas (any variety)
1 large potato, shredded
2 eggs, if desired
2 teaspoons oil, divided
1/4 medium onion, finely chopped
5 springs cilantro, finely chopped
green chillies to taste
salt to taste
shredded cheese
black pepper to taste
oil for frying
