A Vegetarian Thanksgiving! Day 3: The Perfect Vinaigrette Dressing

Yesterday we posted our Thanksgiving recipe for fennel slaw. Today we’re going to show you how to create the perfect vinaigrette topper. The ingredients are simple; you probably have them in your kitchen already. All you need is salt, pepper, dijon mustard, olive oil and vinegar. My favorite part of this video is the chef demonstrating how to properly emulsify the dressing by steadily adding the olive oil into the mix while stirring with a whisk. When it comes to low-calorie slaw dressings, it doesn’t get much easier than this.

You can use a variety of vinegars for this recipe, but I recommend red wine or balsamic to complement the fennel. You won’t even have to budget time for preparation; after watching the video, you’ll be able to make this dressing in your sleep!
