Vegetarian Biryani

This is a delicious Vegetable Kachi Biryani dish from Sheba Fehmi at Sheba’s recipes, which you will love to make again and again.  Simply prepare and mix all the ingredients, and put it in an oven.  This is a very tasty vegetarian meal… delicious!

Ingredients

Basmati Rice 1 cup
Mixed Vegetables 2 Cups
Tomatoes 2
Potato 1
Paneer Cheese cubes 6 to 8
Cauliflower 4 small pieces
Broclli 4 small pieces
Baby carrots 4
Oil 4 table spoons
Butter 1 table spoon
Fried Onions 1/2 to 3/4 cup
Yogurt 3 to 4 table spoons
Lime juice 1/2 lime
Salt 1 teaspoon
Ginger paste 1 teaspoon
Corainder powder 1 teaspoon
Chilli powder 1 teaspoon
Cumin powder 1/2 teaspoon
Turmeric 1/4 teaspoon
Corainder chopped 1/4 cup
Mint leaves chopped 2 table spoon
Green Cardimom 4

 

Method

In a pan boil the soaked Basmati rice.  Cook it al-dente.  Add cloves and cardamom to boiling water.  When the water comes to boil, salt the rice too. Drain the water and set aside the rice.

In another pan, sauté all the vegetables in the oil.  Start with the Paneer till light brown, remove from pot.  Add all other vegetables and continue to sauté for 2 to 3 minutes.  Turn off the heat.  Add all the powdered spices and mix well.  Add yogurt and lime juice and mix again.  Let it marinate for 10 minutes.

Take an oven proof dish and make one layer of rice.  Add half of the fried onions.  Add all the marinated vegetables on top of the rice and onions.  Add all the chopped cilantro and mint leaves.  Cover this by another layer of boiled rice.  Sprinkle the remaining onions.

Add butter, cover with foil. Make it air tight.  Cook in a preheated oven at 350 degrees for 40 minutes.  After 40 minutes take it out, let it rest for 5 minutes, remove foil, mix and serve hot.  Enjoy!
