Vegetable Pasta in White Sauce

Here’s an old vegetarian pasta favorite using fresh spring vegetables (fusion of Indian and Italian cuisine). Perfect for a romantic dinner served with soda/wine and garlic bread.  Turn up the sound and enjoy the visual presentation of this video from VegetarianRecipes,

Tips for pasta:

  • For white sauce, first warm the whole milk in microwave for 1 minute, add gradually while stirring continuously. Unlike shown in video, use whisk instead of wooden spatula to help in removing lumps.
  • Add 1 tbsp oil while boiling water for pasta. This will soften pasta and give nice texture
  • Use normal salted butter. Using diet ones will spoil the taste

If you are running out of time, alternatively try this:

  • Reduce amount of veggies and cook them together.  E.g. just use onion, capsicum, peas, and zucchini/squash. Add oil, garlic, oregano, basil and black pepper.  Then mix all vegetables, and at add salt to taste. To these vegetables, you can add your pasta and white sauce as shown in video.
