If you’re interested in an Indian twist on an old standby, check out this recipe for vegetable fried rice from our friends at Show Me the Curry. The vinegar and cabbage combine to add some nice acidity. I recommend using Sriracha in place of stir-fry sauce to add even more South Asian flavors.
1 cup long grain rice
2 cups vegetable broth or water
Salt to taste
2 tbsp oil
1 tbsp garlic, finely chopped
1 egg, well beaten
½ carrot, thinly sliced
½ bell pepper, thinly sliced
1 cup cabbage, thinly sliced
1 tbsp soy sauce
1 tsp white vinegar
Chinese stir-fry (or chili) sauce – any variety, to taste (try Sriracha)
1 stalk spring onions, sliced
