Looking for a tasty, protein-rich vegan recipe? Check out this spicy black bean dish, which gets its kick from jalapeno peppers and onion.
The chef suggests adding a dollop of sour cream when serving, but I think it is great on its own. Short 3 minute video!
1 Large Can of Black Beans (rinsed & washed)
1 Small onion, chopped
3 Cloves of minced garlic (minced)
1 to 2 jalapenos
2 Bay leaves
2 Tbsp Extra Virgin Olive Oil
Salt and pepper (to taste)
Fresh chopped cilantro
Mix the onions, garlic and jalapenos in a medium saucepan on and sauté under medium heat for 2 to 3 minutes.
Add in the black beans and season with salt and pepper to taste. Stir in 2 cups of water, add in the bay leaves, cover and cook for 25 minutes.
Remove the bay leaves, serve with a sprinkle of fresh cilantro.
