Squash and Zucchini Pancakes

Don’t let the ladybug costume and Ghostbusters theme fool you – this chef knows her stuff! This Korean variation on pancakes has a consistency that’s remarkably similar to traditional pancakes, while using a minimal amount of flour. The chef makes two varieties, one with squash and one with zucchini. Even if vegetable pancakes don’t sound interesting to you, it’s fun to watch the chef show off her knifework.

I’ve found that this works better as a dinner entree than a breakfast meal, but it can be served either way. It’s very high-nutrient and very filling, without a ton of calories.
