Ever thought about mixing peanut butter and pasta? I hadn’t either, until I found this wonderful recipe, which mixes savory and sweet flavors perfectly, with a perfectly integrated spicy kick. This is very easy to make, and will surprise and delight your guests. Enjoy!
5 ounces angel hair pasta
1 shredded carrot
2 diced green onions
1 tbsp chili pepper
2 tbsp peanut butter
1 ½ tbsp. soy sauce
Juice of ½ lime
2 tbsp water
Boil the pasta in a large pot, adding the carrots when the pasta softens, during the last minute of cooking.
Drain and cool under running water
In a small bowl, add the peanut butter, soy sauce, water, and lime juice and whisk until well mixed
Add in the pasta, carrot, onions and chili pepper to a large bowl, mix well, then pour the peanut butter mixture on top.
Mix until combined and serve.
