Oven Roasted Asparagus

This roasted asparagus recipe caught my eye because of the inclusion of orange zest, which makes a tangy counterpoint to the olive oil and salt base. It works well as a side for a tofu dish or part of a vegetable mix. It’s very, very easy to make and the unique flavor will surprise (and delight!) your dinner guests.

Asparagus is a strong source of potassium, which is important to me because it has been linked to preventing the loss of calcium in the body, which may lead to osteoporosis.
