No-Bake Sweet Potato Pie

If you’re getting bored by vegetable side dishes, save the vegetable course for dessert! This sweet potato pie recipe is an easy no-bake dessert with under 300 calories. After dinner, make sure to save room for this one!


2 sweet potatoes, peeled and chopped
2 tbsp. of earth balance
¼ cup of maple syrup
2 tsp of cinnamon
1/3 tsp. of nutmeg
A pinch of salt
½ cup of grape nuts
¼ cup of pecans, chopped

Preparation process

Steam the sweet potatoes for eight-ten minutes, or until tender

While the sweet potatoes cook, combine the cinnamon with the grape nuts and pecans in a small bowl.

When the sweet potatoes are tender, transfer them to a large bowl and mash with a fork until the big chunks are gone.

Spoon in the butter, syrup, and the remainder of the cinnamon, nutmeg, and salt and mix

Scoop about ¾ cup of the sweet potato pie filling into a bowl and top with 1-2 teaspoons of the grape nut mixture and, if you like, a dollop of whipped cream and serve.
