Moroccan Potato Patties (Maakouda)

Our Moroccan-inspired recipe for yogurt lemon cake garnered such a positive response that we wanted to post another North African recipe: Fried potato patties. This simple dish is commonly served street food in Morocco and can be enjoyed as a standalone appetizer or as part of a sandwich. Enjoy!

Ingredients

1 pound of potatoes, peeled and diced
1 tablespoon of finely chopped cilantro
1 tablespoon of finely chopped parsley
1 teaspoon of cumin
1 teaspoon of salt
¼ teaspoon of pepper
1 egg
3 minced garlic cloves
2 cups flour
2 eggs
Oil for frying

Preparation Process

Boil the potatoes until they are soft, then drain and mash with a fork or potato masher

Mix the parsley, cilantro, egg and garlic and splices into the potatoes.

Break the eggs and pour them into a small bowl, then mold the potato mix into small patties and dip the patties into the egg, then dip the patties into the flour

Heat the oil in a skillet and cook the potato patties on high heat until they turn golden brown

Remove the patties and dab with a paper towel to absorb the excess oil. Serve as an appetizer or as a sandwich with lettuce, tomato and the condiments of your choice.
