Low Carb French Fries

Ah, the all American favorite, french fries…clearly not a healthy veggie choice. Here is a great recipe that enables us to avoid the fat and carbs of the fast food variety of fries….and is made from celery root, which the chef says is the closest substitute for potatoes she has found. This simple vegan snack, if seasoned properly, is tastier than any potato fries and a lot healthier!

I must admit that when I came across this recipe, I was not sure what celery root is. Here is what I learned as I did some research.
Just as its name implies, celery root (also known as celeriac) is the root of the celery plant. It looks like an ugly, uninteresting, brown hairball and has a mild, celery-like flavor with a starchy, rather potato-like texture. It’s a surprising but winning combination. that makes for great fries. So let’s try it! Check your local Whole Foods store to find it.

Ingredients

1 large celery root
1 tbsp olive oil
1 tbsp seasoning (I prefer a salt and pepper blend, but any mild seasoning such as Mrs. Dash will work)

Preparation process

Cut the celery root in half and peel the outside skin
Cut the root into steak fry-size pieces and place in a large bowl
Add the olive oil and seasoning and stir well
Bake at 400 degrees for 30 minutes and serve.
