Kale and Avocado Salad

By popular demand, we’re continuing our theme of avocado recipes with this raw green salad, which only requires a few simple veggies and a homemade dressing of olive oil, salt and lemon juice. Feel free to add raw vegetables you like; I’ve found that bell peppers and cherry tomatoes are nice toppers. A great salad to enjoy as a workday lunch!


8 large handfuls of green curly kale, chopped into small pieces
½ teaspoon sea salt
1–2 Tablespoons olive oil
1 ripe avocado, chopped into small pieces
2 large tomatoes, chopped into cubes
Squeeze of fresh lemon juice

Preparation Process

In a bowl, add the kale and olive oil and sea salt and massage the ingredients thoroughly until the oil and salt is incorporated completely into the kale

Add the chopped avocado and massage the mixture together again

Add the tomatoes and mix everything by hand, ensuring that the ingredients are spread evenly

Mix all ingredients by hand, making sure that all ingredients are spread evenly throughout the bowl.

Squeeze a lemon over the top and serve.
