Instant Khaman – Advanced Indian Cooking

Khaman is a savory snack common to areas of northern India, and this video shows how to make it with a steamer. This recipe may pose a challenge to newcomers to Indian cuisine, but the effort is well worth it – it’s one of my favorite North Indian recipes. The chef does a nice job pointing out some of the shortcuts and alternatives to make it less intimidating for novices.

If you don’t own a steamer (or your steamer is out of date) and you’re interested in trying your hand at steam cooking, this is one of the best mid-range cookers out there. I highly recommend it.
