Indian Almond-Quinoa Pilaf

This Indian recipe is special in that it features almonds, which are more traditionally associated with sweets and desserts. This savory dish uses a base of quinoa, which provides a nice source of protein. It’s fairly mild, but can be easily accentuated by replacing the turmeric with a stronger spice.

I’ve wanted to introduce almond recipes to this site for a while, and this video is a perfect introduction. The chef explains the dish’s origin and flavor combinations with a friendly, conversational style that I really appreciate.

The book is divided into sections based on the different types of foods, along with explanations of the various spices used, and sprinkled along the way with the tips from the master chef herself. It is a great south Indian cook book!
