Homemade Warm Spinach Dip

Looking for a great appetizer recipe for your Super Bowl party? This one is super easy and delicious.

If you want to lower the calories, substitute thick Greek yogurt or Neufchâtel cheese (which has 1/3 of the fat content) for the cream cheese.

1 finely chopped onion
2 finely minced garlic cloves
1 10-ounce package frozen chopped spinach, thawed with water squeezed out
1 loaf of sourdough bread, with center carved out to form a bowl
1 8-ounce package cream cheese
1 tablespoon olive oil
1/2 cup Parmesan cheese
1/3 cup water
Salt and pepper

Preparation process
Put olive oil in cold pan
Add garlic and onion while pan is cold
Cook the garlic and onion in the oil until tender, over medium heat
Cut the cream cheese into slices and stir into the pot; let it melt
Add a touch of water as needed to keep the consistency
Add thawed frozen spinach
Add water as needed to enable a smooth mixture
Add salt and pepper
Grate the Parmesan cheese into the spinach mixture

Pour the spinach dip into the bread bowl
Cut the bread removed from the loaf into triangles for serving with the dip.
Serve with crackers, pita bread, or your favorite bread.
