Gujarati Undhiyu (Part One – Muthiya)

Gujarati Undhiyu is a wildly popular, vegetable-heavy Indian dish. Making it is a two-step process, so I decided to split the recipe into two parts. This first video shows how to make muthiya, which is the chickpea base for the dish. It’s a very easy first step in the process, and only requires a few simple ingredients.

I will post the second part of the recipe tomorrow. This can be a challenging dish for newcomers to Indian cuisine, so it’s nice to learn the muthiya component first. Come back tomorrow for the conclusion!
