A Vegetarian Thanksgiving! Day 4: Quinoa Soup

Ever tried quinoa? While it is usually considered to be a whole grain, it is actually a seed.
It is a great whole grain and takes takes less time to cook than other whole grains. Quinoa has the highest protein content and provides 9 essential amino acids. What’s not to like, especially since it is also gluten-free and cholesterol-free?

I had never considered using it in a soup until I found this recipe. If you don’t have a pressure cooker, no worries. You can also cook this on the stove and will need to add about 20-25 minutes to the cooking time. If you are looking for a great soup recipe to add to your Thanksgiving table, this is definitely one to consider.

The chefs in this video use a pressure cooker, something I had not considered in the past.  From my research I found that they have experienced renewed popularity over the last several years because cooks have rediscovered what some cooks have known for a long time–they’re really fast. And it’s easy to cook healthfully with pressure cookers, since the food retains so much more of its nutrients and flavor. I am considering buying one myself and just found this smaller model that may suite me fine.
