Summer is here – time to break out your ice cream maker! This recipe calls for cream of coconut, which should be available at Trader Joe’s, Whole Foods. Fresh Market or another organic grocer. If you like coconut, the hunt is well worth it. A tasty cold treat for any hot day!
Note that the insert in the ice cream maker should be placed in the freezer overnight for best results.
1 cup of heavy cream
1 cup half & half
½ cup whole coconut milk
1 15-oz can cream of coconut
½ tsp vanilla extract
1/8 tsp salt
toasted coconut for topping, if desired
Mix the ingredients together in a large bowl, and whisk until the ingredients are completely combined
Add the mixture to your ice cream maker per the manufacturer’s instructions. Once processed, serve immediately or pour in an airtight container and place into the freezer.
Top with toasted coconut for a special added touch.
