Cinnamon Oatmeal Raisin Pancakes

Have a taste for pancakes but tired of the same old mix? Check out this awesome oatmeal raisin pancake recipe. We all know the health benefits of oats and raisins, and the cinnamon adds a traditional sweet touch. Brew a hot cup of coffee, unfold the newspaper and enjoy!

Ingredients

2 whole eggs
2 tbsp. brown sugar (or maple syrup)
2 tsp. vanilla
3 tbsp. canola oil
1 1/2 cups rolled oats
1/3 cup raisins
2 cups low fat buttermilk (or plain yogurt)
3/4 cup flour
1/2 tsp. baking soda
2 pinches nutmeg
1/2 tsp. baking powder
2 pinches cinnamon
1/2 tsp. salt
1 tbsp. oil or butter

Preparation Process

Whisk together the eggs, brown sugar, vanilla and oil in a bowl.

Once mixed, stir in the oatmeal, raisins, and milk.

In a separate bowl, combine the flour, baking soda, nutmeg, baking powder, cinnamon and salt.

Add in the egg mix and stir until the dry ingredients are incorporated, being careful not to over-mix.

Turn the stovetop to medium-high and add the oil or butter to a pan.

Ladle in the batter and cook, flipping halfway through. (Keep in mind that these will take longer to cook than standard pancakes).

Serve with warm maple syrup.
