Carrot Halwa – A Tasty Indian Dessert

Ingredients

2 lbs finely shredded carrots
14 ounces condensed milk
12 ounces evaporated milk
2 tbsp ghee (clarified butter)
1 tbsp cashews
1 tbsp pistachios
1 lb raisins
¼ tsp cardamom powder
1 tbsp sliced almonds

Preparation process

Soak the raisins in a large bowl of water

In a microwave-safe bowl, mix the carrots, evaporated milk and condensed milk and microwave for 10
minutes.

Remove the bowl, mix thoroughly and microwave for another 10 minutes

Remove, stir again and microwave for 5 minutes. Repeat this step 1 more time, or until the moisture has been fully absorbed by the carrots.

Stir the cardamom into the carrot mixture.

Melt the ghee in a small skillet, then add the cashews and fry for 1 minute.

Drain the raisins from the water, add to the frying pan and cook for 1 minute.

Pour the ghee, cashews and raisins into the carrot mixture.

Mix well, and serve with a garnish of pistachios and almonds.
