2 cloves minced garlic
2 cups frozen spinach
1 cup egg whites
¼ cup light mozzarella cheese
1 splash extra virgin olive oil
Olive oil cooking spray
Salt and pepper to taste
Heat a skillet to medium high. Add the olive oil and garlic and cook for 30 seconds, then pour in the spinach and cook for 3 minutes, then add the salt, pepper and cheese. Cook until the cheese melts, then remove from heat
Heat a separate pan over medium low heat and coat the pan with olive oil spray. Pour in the egg whites and cook until the eggs begin to stick to the pan
Pour in the spinach mixture and stir everything together while keeping the pan on low heat until everything is completely cooked
Serve with the fruit and/or toast of your choice.
