A Vegetarian Thanksgiving! Day 5: Apple Jicama Coleslaw

What is jicama, you ask? It is a large, bulbous root vegetable with inside flesh that white, wet and crunchy. The flavor is slightly sweet, refreshing and a little nutty. Jicama is also called yambean, Mexican potato and Mexican turnip.

This recipe is a unique combination of jicama, cabbage, and apple, mixed with the chef’s “hot pink” dressing.  Definitely something a little different for the holiday table.
The chef recommends making this right before serving to keep it cool and crisp (not making the night before and letting it sit in the fridge).
